Try a little coconut oil in your smoothie for a health kick
Are you on a coconut oil kick? It is difficult to imagine adding a cooking oil to your
smoothie. Coconut oil isn’t like other oils. It has a light taste with a hint of coconut.
The health benefits of adding a spoonful of coconut oil are worth a little experimentation.
My fellow blogger, Michelle from Life is my Lemonade, suggested this flavorful, fruit
smoothie.
Strawberry and Blueberry Coconut Oil Smoothie
1 1/2 cups coconut milk
1 cup strawberries
1/8 cup blueberries
1 tbsp coconut oil
1 banana (optional)
1 tbsp honey
For this recipe you can grab fresh or frozen berries. We used frozen strawberries and
fresh blueberries. Combine the berries, coconut milk, coconut oil, and honey.
Blend on high for 30 seconds or until smooth. Since we used frozen strawberries,
it took about a minute to blend it all into a smoothie consistency.
The end result is a beautiful, purple-hued, smooth, coconut berry smoothie. If you want
less coconut flavor, you can trade the coconut milk for almond milk. The coconut flavor
is perfect to combine with tropical fruits such as mango or citrus.
Get creative and change your fruit each time you make one! Try: peaches, pineapple,
mango, lemons, oranges, or tangerines. Any fruit will do. Additional items that you
can add for a healthy vitamin kick: kale, spinach, chia
I love coconut. I eat a ton of them from my dad’s garden every season. I also use it for my hairs during rainy season – it really works!
