Snack Mix with Coconut Oil
My parents recently became vegan for health reasons and coconut oil has been a lifesaver! Not only is it nutritious and has amazing benefits for everyone, but it also can be used in place of butter in this popular snack mix. It’s awesome to be able to serve great, easy snacks that work for various diets. This can easily be made gluten free as well by exchanging the wheat cereal for more corn and rice and switching out the pretzels or sesame sticks for additional nuts or a gluten free pretzel. This is perfect for serving as a holiday snack!
SNACK MIX
3 cup rice cereal
3 cup corn cereal
3 cup wheat cereal
2 cup pretzels or sesame sticks (the latter is my personal favorite!)
1 cup mixed nuts or peanuts
6 Tablespoons coconut oil
2 Tablespoons Worcestershire sauce
2 1/2 teaspoons seasoned salt
1 teaspoon garlic powder
1/2 teaspoon onion powder
Melt coconut oil and Worcestershire. Add salt, onion powder, and garlic powder. Pour over cereal mix. Bake at 250 for 1 hour stirring every 15 minutes. OR microwave 6 minutes, stirring every 2 min. Spread on a waxed paper or brown bag to cool. Enjoy!
