Everyone needs a good chocolate chip cookie recipe. I love to bake and have tried several recipes. My only problem was that my cookies always end up being too crunchy or just hard…until now. I have found a way to make any chocolate chip cookie recipe turn out perfect! It’s coconut oil! Coconut oil makes the cookies moist and gooey and delicious, just the way I like them. They also turn out nice and thick.
So here is a great chocolate chip cookie recipe to use for this holiday season and all year round. As a side note, you could make these vegan by using an egg substitute like flax/water or applesauce and by making sure your chocolate chips are dairy free.
Chocolate Chip Cookies with Coconut Oil
Chocolate Chip Cookies
2 1/4 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup coconut oil, warmed so it is soft like softened butter
3/4 cup sugar
3/4 cup brown sugar
1 teaspoon vanilla extract
2 large eggs
1 package of your favorite chocolate chips
Preheat oven to 350 F.
In a small bowl combine the flour, baking soda, and salt. Set aside.
In a large bowl, combine coconut oil, sugar, brown sugar and vanilla beat until creamy. Beat in eggs, one at a time. Gradually add flour mixture. Mix well. Add the chocolate chips and stir until just incorporated.
Drop rounded teaspoonfuls of dough onto an un-greased cookie sheets. Bake for 8-10 minutes until golden. Makes about 3-4 dozen 2 inch cookies.
